Salted Caramel Apple Skillet Puffy Pancake

Preheat grill to 400°F indirect. In a cast iron pan, mix apples, 2 tsp cinnamon, brown sugar, and butter. Place on grill, stirring with a nonstick spatula every 10 minutes until the apples are softened (20-30 minutes). Whisk together eggs, flour, milk, 1 tsp cinnamon, and 1/2 tsp kosher salt, making sure there are no lumps. Pour batter over apples and stir gently. Grill until the batter has puffed up and set, approximately 20 minutes. Serve warm with powdered sugar, ice cream, caramel, chopped pecans, etc. For an adult version, add 2 oz bourbon to the apples.
