Simple Easy Turkey Pot Pie

1. Sauté onions + celery in olive oil & butter.
2. Add thyme, seasoning, pepper & poultry seasoning. Cook till soft + golden.
3. Pour in stock and bring to a simmer.
4. Add cream and bring back to a simmer.
5. Stir in mixed veggies.
6. Add chopped smoked turkey. Taste and adjust seasoning.
7. Stir in cornstarch slurry until thick and glossy.
8. Cool filling completely.
9. Divide into pie crusts, top with pastry, crimp, vent.
10. Bake at 350°F for 40–45 min until golden brown.
