Simple Smoked Ratatouille

1. Preheat grill to 350°F with hickory or your favorite pellets.
2. In a grill-proof pan, sauté onions in 2 tbsp olive oil until softened. Add roasted red peppers, garlic, 1 tbsp herbs, sugar (if using), and diced tomatoes. Simmer gently; season with salt & pepper.
3. Season zucchini, eggplant, and tomato slices with salt, pepper, and remaining herbs.
4. Arrange vegetables in a circular pattern over the sauce. Drizzle with remaining olive oil.
5. Smoke at 225°F for 1 hour. Increase heat to 350°F, cover, and cook 30–45 minutes until tender.
6. Rest 20 minutes. Finish with fresh herbs and Parmesan if desired.
