Smoke Roasted Garlic from the Grill

1. Select whole garlic bulbs that feel heavy and tight, ensuring the cloves are not loose.
2. Cut just a little from the tops of each garlic bulb.
3. Place the prepared garlic bulbs into a disposable tray or baking pan.
4. Sprinkle generously with good quality olive oil. Optionally, you can add salt, pepper, or your favorite BBQ rub.
5. Place the tray on a Traeger Grill set to 275°F and smoke until the garlic is just golden in color, which takes about an hour.
6. If the garlic appears a little dry after this initial smoking stage (before wrapping with foil), add a cup of water to the bottom of the tray to create more steam.
7. Cover the tray with foil and continue to smoke until the garlic cloves are softened and creamy. The total smoking time will be about 2 1/2 hours.
8. The garlic is done when it is golden and squeezable.
9. (Optional) For freezing, press two whole bulbs together on the cut side and wrap them in plastic wrap. Place them into a resealable freezer bag or container with a tight-fitting lid. They can be frozen for a couple of months and thawed in about 45 seconds in the microwave.
