Smoke Roasted Peppers

1. Preheat your grill to 400F.
2. Wash and dry your peppers thoroughly.
3. (Optional for smokier taste): Smoke peppers at 225F for 30 minutes first, then increase heat to 400F.
4. Load your grill with the peppers and grill for 15-20 minutes.
5. Turn the peppers over and continue to grill for another 15-20 minutes, until they are slightly charred on the outside and much softer. Ensure peppers are completely softened.
6. Once charred and softened, take all peppers and pile them into a large bowl. Immediately cover the bowl tightly with plastic wrap to seal it. This steaming process helps loosen the outer skin.
7. Allow peppers to cool in the bowl for about 20-30 minutes, until cool enough to handle.
8. Once cooled, remove the outer skin, stem, and seeds from each pepper and discard.
9. The cleaned peppers are now ready for use. To store, freeze them in containers with a thin layer of olive oil. They will keep for a couple of months.
