Smoked apple hand pies

Preheat your grill to 225 F. In a disposable pan, mix chopped Fuji apples, cinnamon, 4 tbsp salted butter, 1/2 cup raw sugar, 1/2 tsp kosher salt, and 4 tbsp apple juice. Smoke for 1.5 hours or until apples are softened to your preference, turning over apples every 15 minutes. Mix 4 tbsp flour and 4 tbsp water, then add to the apple mixture. Increase grill temperature to 350F. Return the apple mixture to the grill for an additional 15 minutes until thickened. Remove from grill to cool. Cut pie dough into quarters. Place 2-3 tbsp apple mixture in the center of each dough quarter and crimp sides to close. Brush the hand pies with 1/2 cup melted butter and sprinkle with 1/2 cup raw sugar. Increase grill temp to 400F. Place hand pies on butcher paper or parchment paper and bake for 20-25 minutes until golden.
