Smoked Beef Short Ribs

Rub the beef short ribs with a homemade beef rub consisting of 4 tablespoons Redmond Real Salt, 2 tablespoons black pepper, 2 tablespoons roasted garlic, and 2 tablespoons smoked paprika. Smoke the ribs on the grill at 250°F (121°C) until the internal temperature reaches 170°F (77°C), spritzing with apple juice every hour. Once at 170°F, wrap the ribs with low sodium beef broth, onions, carrots, and whole cloves of garlic. Continue cooking until the internal temperature reaches 208°F (98°C).
