Up your meat sauce game with this rich Smoked Bloody Mary Bolognese, perfect for a simmering Sunday family dinner. This over-the-top awesome meat sauce is cooked on a pellet grill for a unique wood-fired flavor.
Sauté finely chopped onion, celery, and carrot in olive oil until softened. Transfer the sautéed vegetables to a preheated 275°F grill. Add in a couple pounds of organic ground beef and a whole bulb of smoked garlic (about 12 cloves), breaking up the meat into smaller pieces until cooked through. Add in 2 cups of smoked Bloody Mary mix, 1 can of diced tomatoes, 1 can of puréed tomatoes, and a small can of tomato paste. To cut the acidity of the tomatoes, add in 1-2 tablespoons of sugar. Generously season with basil, oregano, parsley, and dried chives. Add in 1 cup of milk and 1 cup of shredded Parmesan. Lower the temperature of the grill to 225°F and simmer for 1 hour, stirring every 20 minutes. Serve warm over anything from pasta to bread to chicken cutlets and beef.
