Smoked & Braised Corned Beef

Soak the corned beef overnight in water. Once soaked, sprinkle the corned beef with Diva Q sweet rub and the seasoning packet (from the corned beef package). Place the seasoned corned beef into a braiser (like a Le Creuset braiser) with a bottle of Smithwick's Red ale, sweet Vidalia onions, and carrots. Smoke for 3 hours at 225F on a Traegergrills Ironwood. After 3 hours, cover the braiser and continue to cook until the internal temperature of the corned beef reaches 210F. Rest the cooked corned beef for 1.5 hours before slicing and serving.
