A quick and easy appetizer perfect for game day or entertaining. Small tortillas are baked in a muffin pan, then filled with a creamy, spicy smoked chicken and cheese mixture, topped with more cheese, and grilled until melted.
Preheat your grill (e.g., Traeger) to 375°F. Place small 3-4” tortillas into a muffin pan. Bake for 20 minutes or until golden brown. Remove from grill.
For the filling: Place 2 cups cottage cheese, 1 packet (1oz) taco seasoning mix, 2 tbsp spicy brown mustard, 1/4 cup hot sauce, and 1/4 cup water in a blender and pulse until smooth. Mix the blended mixture with 3 cups warmed shredded smoked chicken. Mix in 1 cup shredded mozzarella cheese.
When the taco cups are golden, fill them with the chicken mixture and top with more shredded mozzarella cheese (or your favorite cheese). Return to the grill until the cheese is melted. Top with chives, jalapeños, or salsa before serving.
