Smoked Garlic Cream Sauce

In a small pan on medium heat melt butter and whisk in flour. Cook the mixture for 2 to 3 minutes, whisking constantly. Add in the roasted garlic paste and cook for another minute. Slowly, pour the milk into the pan, whisking constantly; continue to cook until bubbling and thick. Remove from heat. Add in the dried chives and the cheese, whisking to combine. Taste test and season with salt and pepper. Use on all pastas or for all things chicken wings. If the sauce is too thick, add a tablespoon or two of hot water to thin out.
