Smoked Garlic from the Grill

1. Cut the tops off of whole bulbs of garlic.
2. Sprinkle on some olive oil, salt, and pepper (or use your favorite BBQ rub).
3. Place the garlic bulbs on a tray. If the garlic seems dry, add a cup of water to the bottom of the tray to create steam.
4. Smoke the garlic on a Traeger Grill at 275F until just golden in color, which takes about an hour.
5. After the first hour, cover the garlic with foil and continue to smoke until the cloves are softened and creamy. The total smoking time should be approximately 2.5 hours.
6. Allow the smoked garlic to cool. For freezing, wrap the whole bulbs in plastic wrap and then place them into a freezer Ziploc bag. To thaw, microwave for about 45 seconds.
