Smoked & Seared Beef Tenderloin

Smoke the tied beef tenderloin in a Traeger Timberline 850 (or similar smoker) at 225F using hickory wood pellets until the internal temperature reaches 110F. Then, transfer the tenderloin to a searing hot cast iron pan and sear until the internal temperature reaches 130F. While searing, baste the tenderloin with au jus garlic butter and fresh thyme. Rest the beef tenderloin before slicing and serving.
