Thanksgiving sides should be as outstanding as the turkey, and this smoked acorn squash glazed with smoked syrup, whisky honey, and cinnamon butter knocks it out of the park! Seriously delicious on squash, biscuits, pancakes – just about anything.
First, prepare the butter mixture: whisk together 1 cup melted unsalted butter, 1/2 cup whisky honey, 1/2 cup Traeger Smoked Simple syrup, and 2 tsp cinnamon thoroughly. Refrigerate the mixture until ready to use. Next, prepare the squash: slice the acorn squash and remove the seeds (an ice cream scoop works well for this). Pierce each squash slice multiple times with a fork. Brush the butter mixture generously onto the squash slices and season with salt and pepper. Place the squash in a smoker preheated to 250F. Smoke until tender, reapplying the butter mixture halfway through the cooking process (approximately 1 hour in). The total cooking time can vary, but on average, it takes about 2 hours for the squash to become completely super fork tender and caramelized. Serve hot with additional butter mixture, if desired. Enjoy!
