Smoke-Roasted Garlic Obsession

1. Trim the tops off whole garlic bulbs—just enough to expose the cloves.
2. Arrange them on a cookie sheet (line it with foil for easy cleanup).
3. Drizzle generously with olive oil, and season with kosher salt + finely ground black pepper.
4. Fire up your Traeger Grills to 250°F with your favorite pellets.
5. Smoke uncovered for 1–2 hours until they start turning golden.
6. Then cover the tray with foil and continue grilling 30–45 min until soft & buttery.

Pro tip: If the garlic starts to look dry, add a splash of water to the pan before covering!

Once cooled to room temp, wrap each bulb in food-safe plastic wrap, then place into a resealable freezer bag or container. Toss ’em in the freezer.
