From our New Years Eve feast. Very rarely do I ever get a chance to eat stone crab claws. A huge Florida treat for our whole family. These are grilled at 400°F for about 20 to 25 minutes or until the internal temperature of the crab is 145 to 150°. these were smaller claws. Larger ones will absolutely take longer ! Now this is not an easy Item to take a temperature. You actually have to go right at the soft part of the joint and pierce the @thermapen probe in. I made sure to place these all on trays lined with mesh baking racks to make it easier to move them. additionally make sure you have an icy ❄️ cold water bath to plunge the crab 🦀 claws in immediately after they come off the grill. This will stop the cooking process rapidly and additionally help pull the meat away from the shell of the crab. I paired our seafood with a trio of sauces : seafood sauce, remoulade sauce and a tarter sauce. Lots of fun & perfect for big celebrations.
