Sugar Lips Saucy Crispy Wings

When you take your wings out of the package, pat them down with lots of paper towels to remove any excess moisture. In a bowl, toss the wings with the baking powder and the salt. Make sure each wing is well coated. For the best ever crispiest wings, leave them uncovered in the fridge overnight. Then proceed - Lay the wings out on a mash baking rack making sure to leave room in between each wing. Preheat your grill to 225° using your favorite pellet (hickory and apple were used). Place the rack full of wings on the grill for one hour. If your wings are especially large, you may want to do this for one and 1/2 to two hours. Then increase your grill temperature to 400°F. Continue to grill until the internal temperature of the wings reaches 170°F, then toss with the sauce. Place them back on the grill; personally, I like to take mine higher than average – I take them to just around 200 to 205°F. Remove from the grill, rest a couple of minutes then get your nosh on.
