Superior Super Bowl Snackage: Stuffed Sausage Fatty

1. Lay down a piece of plastic wrap. Line the plastic wrap with super thin bacon slices, ensuring they are slightly overlapping.
2. Add a layer of sausage meat over the bacon. Adjust the quantity of sausage based on your party size.
3. Layer fresh jalapeños over the sausage for a spicy kick, followed by a generous amount of sharp cheddar cheese.
4. Use the plastic wrap to help bring each side up, forming a bacon-wrapped sausage fatty.
5. Season the exterior generously with your favorite BBQ rub.
6. Preheat your grill (e.g., Traeger) to 225F. Place the sausage fatty on the grill and smoke until its internal temperature reaches 155F.
7. Glaze the fatty with your favorite BBQ sauce. Increase the grill temperature to 300F to set the sauce, continuing to cook until the internal temperature of the meat reaches 165F.
8. Remove from the grill and rest for 10-15 minutes.
9. Slice and serve. This dish is great on its own or served in bao buns, brioche buns, or topped with slaw.
