Triple Threat Garlic Caesar Dressing

Start by whisking together the mashed confit garlic, fresh garlic paste, Parmesan, lemon juice, Dijon, anchovy paste, pepper, and egg yolk in a bowl.

Once that mixture is smooth, SLOWLY drizzle in the garlic oil while whisking constantly. Take your time here — this is how you get that rich, creamy emulsion instead of a loose dressing.

Keep whisking until thick and glossy. Taste it. Add salt if it needs it. Want more lemon? Go for it.
