Whiskey Kissed Grilled Pineapple Upside Down Cake
25 mins prepServes 12
A classic pineapple upside down cake with a twist! Grilling the pineapple ahead of time makes them sweeter and softer, and a touch of whiskey adds a unique flavor. This recipe makes two 8-9” cast iron cakes.
1. Prepare the yellow cake mix according to package directions and set aside.
2. Preheat your grill to 450F.
3. Grill the pineapple slices for 10-15 minutes, turning them a couple of times to char lightly and soften. Once grilled, turn the heat down on the grill to 375F.
4. Divide the melted butter between two 8-9” cast iron pans (6 tbsp in each) and ensure the bottom of each pan is completely coated.
5. Sprinkle 1/2 cup of brown sugar into each pan, spreading it evenly over the butter.
6. Pour 5 oz of whiskey over the brown sugar in each pan.
7. Arrange the grilled pineapple slices into the pans, then add the maraschino cherries.
8. Carefully and slowly pour half of the prepared cake batter over the pineapples and cherries in each pan.
9. Bake on the grill for 35-40 minutes or until lightly golden.
10. Cover each of the pans with foil and bake an additional 20 minutes.
11. Remove from the grill and remove the foil. Let the cakes rest for 15 minutes.
12. Carefully place a plate over each pan and flip the cake over to invert it. Repeat for the second cake.
13. Cool slightly and serve with whipped cream.
