Woodfire Kissed Shepherd’s Pie

In a large pan sauté onions, celery, carrots, with unsalted butter. Season with salt and pepper. Cook for 10 minutes or until the vegetables are softened. Add in garlic, rosemary, thyme, Worcestershire sauce, red wine, tomato paste, beef broth and Aus jus concentrate. Simmer on medium for 15 to 20 minutes.

In large pan heat up oil and then add in minced beef. Season with salt and pepper. Sauté until beef is cooked through. Drain any residual fat from the pan and sprinkle flour over the beef. Stir to combine and coat the meat. Add the vegetable and broth mixture to the beef pan. Simmer for 5 to 10 min stir to combine and thicken to your liking. (Adjust with broth if needed) Add in peas & stir. Taste test adjust for any salt & pepper.

Preheat Traeger grill to 350°F. Pour beef mixture into a grill safe 4-5 Qt pan. Top with mashed potatoes. Score the surface of the mashed potatoes with a knife or a fork. Brush top of mashed potatoes with melted butter. Bake for 30-45 min until bubbling hot & golden.
