Woodfired BBQ Crispy Chicken Wings with Diva Q Buffalo Sauce

1. Take your wings out of the package and pat them down thoroughly with paper towels to remove any excess moisture.
2. In a bowl, toss the wings with the baking powder and the 2 tsp salt. Ensure each wing is very well coated.
3. Lay the wings out on a mesh baking rack, making sure to leave room in between each wing.
4. Refrigerate uncovered for a minimum of 4 hours. For best results, refrigerate overnight.
5. Preheat your grill (e.g., Traeger) to 225°F using your favorite pellets.
6. Place the rack full of wings on the grill for one hour. If your wings are especially large, you may want to grill for 1.5 to 2 hours.
7. After the initial grilling time, increase your grill temperature to 400°F.
8. Continue to grill until the internal temperature of the wings reaches a minimum of 180°F. For crispier wings, cook to around 200°F to 205°F.
9. While wings are grilling, prepare the Diva Q Buffalo Sauce: In a small bowl, whisk together the 1/2 cup Cholula Chipotle Hot sauce, 6 tbsp unsalted melted butter, 1/4 cup Guldens Spicy Mustard, 1/2 tsp black pepper, and 1/2 tsp fine sea salt.
10. Once cooked, toss the hot wings from the grill with the prepared Buffalo sauce and serve.
11. Optionally, sprinkle with blue cheese crumbles.
